“The town of Kawit, Cavite (the site of the declaration of Philippines independence against Spain in 1898) commemorates a special place in our country’s history as the birthplace of the Republic and of Gen. Emilio Aguinaldo (the first Philippine president). Adobo sa dilaw (or yellow adobo) was brought to Kawit from Taal, Batangas, when the general married his second wife, Maria Agoncillo of Taal, Batangas Province. Because Caviteños prefer “masarsa” or saucy adobo, the adobong dilaw is concocted with thick, rich golden sauce made from turmeric, extra broth, and breadcrumbs.”
